Luxuriating the Strawberry Way

June is strawberry season here on the east coast of the USA.  The days are longer, the weather is warmer, and for many the desire to spend more time outside while keeping cool kicks in.  Try these very easy to prepare, delicious, and light strawberry dessert options that compete with the best of strawberries and whipped cream. None will take hours to prepare, and all can be enjoyed in the comfort of your home or while walking or sitting outside. For all these treats, wash, dry, remove stems, and slice the strawberries.

The first 3 simple strawberry desserts are adapted from the Italian way of eating strawberries and were introduced to me during my time there as a student. I’ve made some minor, contemporary tweaks for the ultimate in food quality.

Strawberries With Fresh Squeezed Lemon Juice – Serving size 4
12 organic strawberries  
½ organic lemon

Prepare strawberries and place into a serving bowl.  Using the palm of your hand, roll out a fresh, uncut lemon on your cutting board for approximately 30 seconds. Cut the lemon in ½. Take one of the lemon halves and squeeze with the cut side up of the bowl of strawberries.  Remove any lemon pits that may have gotten into the bowl. Cover the bowl with plastic wrap and let chill and marinate in refrigerator for 30 minutes.

Serve in 4 separate dessert bowls.


Strawberries with Organic, Unrefined Coconut Sugar – Serving Size 4
12 organic strawberries
1 teaspoon of organic, unrefined coconut palm sugar (I use Sweet Tree brand – delicious and low glycemic level)

Add prepared strawberries into a serving bowl and sprinkle 1 teaspoon of coconut palm sugar to them.
Refrigerate for 30 minutes.

Serve in 4 separate dessert bowls.

(Some of you may worry about adding “sugar” as though sugar is the enemy. This wonderful dessert is all organic, very low on the glycemic load chart and only contains ¼ teaspoon of coconut sugar per serving! Please enjoy to the fullest!)

Strawberries with Organic Red Wine – Serving Size 4
12 organic strawberries
½ cup of organic red wine of your choice (You may also enjoy a rose’ wine.)

Prepare strawberries and place into a serving bowl. Pour in the ½ cup of wine. Let sit for 30 minutes and serve.

Strawberries & Goat’s Milk Ice cream Parfait – Serving Size 4
12 organic strawberries
1 pint of goat’s milk ice cream (I use LaLoos Goat’s Milk Ice Cream – Vanilla Snowflake)

Optional:  2 tablespoons of raw, cacao nibs and/or chopped walnuts

Here is simplicity at its best and using goat’s milk ice cream allows many with lactose intolerance to enjoy as well. There are relatively few ingredients in this ice cream which you can find in your local health food store or Whole Foods shop.

If you’re using raw cacao nibs or nuts, please empty the entire pint of ice cream into a serving bowl and stir in these items. You may also mix in the strawberries at this point or add at the end as a topping.

Serve in 4 separate cups or dessert bowls.

Enjoy immediately!
